 The weather in NY this weekend was beautiful! I can see the light beyond the dreary cold winter! We spent the weekend locally, eating a lot, shopping a little, and just enjoying every moment. I hope everyone had a wonderful weekend!

My sister came for a visit this weekend. We brunched and lunched locally in Astoria on Saturday. It was still bitter cold but we made the best of it.

 My new winter shades came in the mail. So very excited about these Warby Parker Mable sunnies! You can buy them here

 I Scored this fantastic bag at Zara's huge sale! So obsessed with it!

 

And I did spend quite a bit of time with this little guy. I can never get enough of him!

Butternut Squash Frittata

This weekend my brother-in-law came to visit. Whenever we have visitors my favorite thing to do is to prepare a special breakfast. Typically I make it indulgent, and sweet. Like pumpkin pie pancakes, I've posted about here. This time I wanted to cook up something a bit more savory. I had a fridge filled with butternut squash from my husbands butternut squash soup he made earlier in the week, so I knew I wanted to use that up somehow. After a quick search I came across this recipe and it sounded interesting enough to try out. I made a few adjustments to the recipe and it really turned out super! Everyone even went in for seconds.

My adjustments were:
Sub Kale for Spinach
Omitted the mushrooms (My Husbands hates them, sigh...)
Omitted the sage
Sub the gruyere for goat cheese
I used almond milk instead of a diary milk

Bacon & Maple Pancakes

 Happy Friday!
 This weekend I intend to do a lot of indulging. And I'll start by making these perfect, crunchy, salty, sweet pancakes.

 I use this recipe for the base of my pancakes and they always come out perfect. Just add super crispy pork bacon or turkey bacon and top with more crumbled bacon, and drizzle the best maple syrup you can find! A Perfect way to start a Saturday morning. Have a wonderful weekend!

This weekend...

1. John and I discovered the absolute heaven of all ice creams. Ben and Jerry's Red Velvet cake. AMAZING!
2. We went to bloomindales to register. Although we did NOT register for this insanely amazing Swarovski encrusted gold china set I almost wish I could have...
3. My new Kate Spade nook cover came in the mail and its making reading time so much more fun and glamorous
4. We used our new slow cooker for the first time and our braised shortribs were incredible and slid right off the bone before they even made it to the plate! My home made sweet potatoes were also a hit!

1. John made his amazing homemade meatballs and sauce for my sister and her boyfriend who came to stay with us.
2. Moonshine cocktails and our made up SNL drinking game rules (don't ask)
3. French press coffee in my favorite gold Bodum press  bought here
4. Sweet potato and puff pastry egg pockets for brunch at home (recipe to come this week)
